  • 2 very ripe bananas
  • juice of 1/2 lemon
  • 150 gram Butter
  • fifty gram ground hazelnuts
  • 2 eggs L
  • 225 gram flour
  • one pinch living room
  • one CDTA baking soda
  • one CDTA powdered pastry yeast
  • 130 gram sour cream or plain Greek yogurt without sugar
  • For the glaze
  • fifty gram apricot jam
  • Preheat the oven to 180º with heat below and above. Grease the mold and cover the base with parchment paper.

  • Smash one of the bananas until you get a puree. Reserve

  • Add butter and sugar to a bowl and mix until creamy.

  • Add the ground hazelnuts and the eggs one at a time.

  • Add the mashed banana and sour cream or yogurt.

  • Add the sifted flour with the salt, the baking soda and the pastry yeast with soft and enveloping movements

  • Pour the mixture into the mold

  • Slice a banana lengthwise, drizzle with the lemon juice and place on the dough

  • Bake for about 50 minutes or until poked with a skewer, it comes out dry.

  • After baking, remove the cake from the oven, wait 10 minutes and unmold on a wire rack.

  • Glazed

  • Heat the jam in the microwave with 1 tablespoon of water, mix well and pass it through a strainer to obtain a very uniform mixture.

  • Paint the bananas on the surface of the cake with the glaze 2 or 3 times and serve
