  • 500 gram of beef in strips or small pieces
  • 1 big Onion
  • 3 garlic cloves
  • 1 piece of red, green and yellow bell pepper (or a whole bell pepper of a single color)
  • 200 ml of red wine
  • 200 gram fried tomato
  • 1 CDTA concentrated tomato
  • 1 CDTA sweet and sour paprika (or sweet)

  • two carrots
  • 600 ml of meat broth or water have a little more in case you need to add
  • two big potatoes
  • 400 gram of cooked chickpeas (drained weight)
  • salt and ground black pepper
  • extra virgin olive oil (in sufficient quantity)
  • Put the pot on the fire with a good jet of oil, when it is hot, brown the meat. First brown half of the meat, remove and then the next half. We do this to get the meat to maintain a high heat and get a rich browning. Once all the meat is browned, we transfer it to a bowl

  • If necessary, in the same pot, add a little more oil and brown the onion and the minced garlic cloves. Add the chopped peppers and continue browning. Sprinkle salt and black pepper

  • Once everything is golden, we make a hole in the center of the pot, add the paprika, toast them for a few seconds, add the red wine, let it evaporate for a moment. Add the fried tomato, the concentrated tomato, mix. We add the sliced ​​carrots, the broth, the bay leaf, we put the lid on the pot and once it starts to boil, we count 15 minutes. (My plate that goes from 1 to 9, I have had it at 5)

  • Now add the meat, put the lid back on and cook for another 10 minutes.

  • Now add the peeled and cascaded potatoes for the stew, sprinkle with salt, cover the pot and count 17 minutes from when it starts to boil.

  • Now add the drained chickpeas, with the pot covered we count 3 more minutes from when it starts to boil.

  • We check the tenderness point of the stew, rectify salt, sprinkle chopped parsley and serve.
